 |  SAMPLE RECIPE Salsas
 | | Holiday Salsa 
 A traditional salsa for the holidays-especially good with turkey.
 It makes welcome gifts too!
 
 1 lb. bag fresh CRANBERRIES
 1 Ig. red APPLE (Delicious, if available)
 1 Ig. ORANGE, rind included
 2 cups SUGAR 2 JALAPEÑOS, seeded and minced
 
 Seed apple and orange and cut into chunks. Wash cranberries.
 Place cranberries, apple and orange in food processor and chop together. Stir in sugar and jalapeño. Mix very well. Prepare at least 48 hours before serving. This salsa improves with age and freezes well.
 
 Makes 3 cups.
 
 Honey Salsa
 
 This unusual salsa is popular in southwest Texas. It is usually served with grilled chicken.
 
 4 Tbsp. VEGETABLE OIL
 4 Tbsp. LIME JUICE
 2 Tbsp. HONEY
 3 Ig. fresh TOMATOES, diced
 1 JALAPEÑO or SERRANO CHILE, minced
 1 Tbsp. fresh CILANTRO, chopped or 2 tsp. dried CILANTRO
 
 Blend all ingredients together.
 
 Makes 1 1/4 cups.
