SAMPLE RECIPE
Date and Walnut Torte
Catherine Hillman, Scottsdale, AZ

4 EGGS (separated)
1 cup SUGAR
1 tsp. BAKING POWDER
1/8 tsp. SALT
1 Tbsp. FLOUR
1 cup MEDJOOL DATES (chopped)
1 cup WALNUTS (chopped)
1 tsp. VANILLA

Beat the egg yolks until thick and lemon-colored. Add the sugar, beat constantly. Combine dry ingredients with the nut meats and dates which have been cut into pieces, and fold into the first mixture. Beat whites until stiff and fold in. Add vanilla and bake in a greased nine-inch square pan at 350 degrees for 40-50 minutes. Serve with Butterscotch Sauce.

Serves 8 or 9.

BUTTERSCOTCH SAUCE:

1 1/2 cups BROWN SUGAR
2/3 cup white CORN SYRUP
4 Tbsp. BUTTER
3/4 cup CREAM
1/3 cup PECANS
1/8 tsp. SALT

Cook sugar, syrup and butter together until it reaches 236 degrees (soft ball stage). Then add the thin cream, very slowly, stirring constantly. Add nuts and salt.
